My leftover brussels sprouts au gratin is made in a glass casserole dish or pie plate with a bottom base of chopped sprouts followed by a light dusting of grated parmesan cheese. Next we layer chopped turkey, mashed potatoes, onions and cheese onto the sprouts. We top the dish with green onions and ham for a colorful finish that provides a wonderful flavor palate and texture.

Recipe: Bobotie

Bobotie is a South African curry style dish that is inspired by Cape Malay and Cape Dutch backgrounds. The curry used in the simple dish is a yellow malay curry and you can add more spices like Jeera and Panchpuran if you own them.

Bobotie is typically served with a yellow rice and perhaps a salad on the side. I like to serve it with sweet potatoes, beets and peas!
