Bean burritos are my favorite (fast) meat-free meal. I love how I can just open a can of beans, rinse them and throw them in a frying pan and I’m already half done cooking supper.
Just add a few seasonings and mash them up!
step 1: Rinse beans (kidney or black) and put them in a large frying pan.
step 2: Add about 1/3 cup of water and a splash of cooking oil and bring the beans and liquids to a rolling boil on medium-high heat.
step 3: Add your favorite spices. I use chili powder, ancho chili powder, garlic powder, red pepper flakes, Tex-Mex spice, and pepper.
step 4: Once your beans are boiling turn down the heat and smash them up with a potato masher until smooth. serve in a tortilla with cheese, guacamole, and plain yogurt.
Serve hot in a tortilla with cheese, guacamole, and plain yogurt.
Tips- If the beans become dry just add a little water and stir it in. They can be reheated in the pan or microwave.
Serve with your favorite fruit or veggie.
