Mac N Cheese
Serves 4 people
You’ll need:
- 1 bag frozen cauliflower
- ¼ cup butter
- 1 clove garlic
- Pasta (I prefer to use whole wheat pasta but use any shape or type that you have at home)
- 2 cups of grated cheese (any cheese or a mixture of different types)
- 1 cup milk (or milk alternative like soy or almond milk)
- 2 tsp mustard
- ½ tsp Pepper
- ½ tsp Paprika
Preheat oven to 375.
Step 1: Boil 2 cups of raw pasta until cooked. Once cooked strain off the water and leave it in the pot. (Check the box of pasta for more detailed directions)
Step 2: Add ½ bag of frozen cauliflower to a large frying pan and cook on low-medium heat for 5-10 minutes then turn off.
Step 3: Grate 2 cups of cheese. Any cheese will taste great but I like to use cheddar and mozzarella.
Step 4: Put warmed up cauliflower on cutting board and let cool. We need to chop it up soon.
Step 5: Put 1 minced garlic clove into frying pan, add the butter and cook on medium heat for 3 minutes then turn off.
Step 6: Chop up cauliflower and put it in the pan with the garlic. Turn on heat to medium and stir while heating for 5 minutes or until cauliflower begins to brown. Turn off heat and add the cooked pasta, spices, mustard, cheese, and milk to the cauliflower in a large bowl. Mix it up well and dump it into your cooking dish. (Use a casserole dish or a deep oven-safe pot)
Step 7: Bake in the oven at 375 for 25 minutes or until the Mac N Cheese starts to bubble up and get golden brown on top.
Additionally for a more advanced Mac N Cheese also prepare kale chips and top the Mac N Cheese bake with cooked kale chips during the last 5 minutes of cooking.
Broccoli Bites
Makes 12-16 bites
You’ll need:
- ½ head of broccoli
- ¾ cup uncooked quinoa
- 1½ cup water
- 1 medium size onion
- 2 cloves garlic
- 1 cup of grated cheese (any cheese or a mixture of different types)
- 2 eggs
- ½ tsp Pepper
- ½ tsp Paprika
Preheat oven to 375.
Step 1: Rinse quinoa. (It’s small- this is hard. I recommend rinsing it in the pot you’re going to cook in. Use your hands or a spoon to keep the quinoa in the pot when you dump out the water.
Step 2: Add 1½ cup water to your pot of rinsed quinoa. Turn the heat up to medium and let the quinoa boil for 12 minutes.
Step 3: Mince or puree (if you have a little blender or food processor) the onion.
Step 4: Chop the washed broccoli and garlic.
Step 5: Beat 2 eggs in a large bowl.
Step 5: Add the onion, broccoli, garlic, pepper, paprika and quinoa to the bowl of eggs and stir together. Add the cheese and mix it in well.
Step 6: Add your mixture (of all ingredients) into lightly greased muffin tins. Squish them down with a spoon or a plastic cup. Sprinkle a little cheese on top of each one.
Step 7: Bake in the oven at 350 for 13-18 minutes until the cheese on top bubbles up and gets brown and crispy.
